Depends on what you know ;) .

There is a DLC scenario pack which contains--IIRC--, 5 scenarios, some of them full campaigns.

1862: Struggle for the Heartland (2 Theater Campaign): This scenario begins February 1862 and lasts until the end of 1865.
Description: As the Union player, you have three objectives. First, in the East, you must use the Army of the Potomac and other forces to destroy the Confederate armies and capture Richmond. Secondly, in the West you must coordinate your armies in order to use your superior numbers and riverine assets to firstly capture Southern Kentucky, then move on to secure middle and western Tennessee. Secondary objectives are to capture south-west Missouri, as well as New Orleans by sea. Thirdly, you must continue your naval campaign against the South by capturing or blockading Southern ports. §As the Confederate player in the East you must decisively defeat the Union Armies before you are eventually overwhelmed by the superior manpower and materiel of the North, as well as protect the South from invasion by land and sea. In the West you must undertake operations to control the border states of Missouri and Kentucky, as well as maintain your control of the Mississippi River. You must also protect your ports from capture and use blockade runners to ship cotton to Europe and bring back badly needed money and arms.

1862: East (East Theater Scenario): This scenario lasts from late February 1862 to end February 1863 (24 turns).
Description: As the Union player, your primary objectives are to use the Army of the Potomac and other forces to destroy the Confederate armies and capture Richmond. A secondary objective is to continue your naval campaign against the South by capturing or blockading Southern ports. As the Confederate player, you must decisively defeat the Union Armies before you are eventually overwhelmed by the superior manpower and materiel of the North. You must also protect your ports from capture and use blockade runners to ship cotton to Europe and bring back badly needed money and arms. Scenario Author Philippe Thibaut - Scenario Editor Jeff Lickers aka Bigus - Background by Robert Osterlund aka Berto

1863: Triumph + Defeat (2 Theater Campaign): This scenario begins March 1863 and lasts until the end of 1865.
Description: As the Union player, you have three objectives. First, in the East, you must use the Army of the Potomac and other forces to destroy the Confederate armies and capture Richmond. Secondly, in the West your goal is to control the Mississippi river, which will split the Confederacy in two, so you must capture Vicksburg. You must also advance up the Mississippi river from New Orleans, as well as capture eastern Tennessee. Thirdly, you must continue your naval campaign against the South by capturing or blockading Southern ports.§As the Confederate player in the East you must decisively defeat the Union Armies before you are eventually overwhelmed by the superior manpower and materiel of the North, as well as protect the South from invasion by land and sea. In the West, you must hold on to Vicksburg at all costs, as its loss will isolate Louisiana, Arkansas and Texas from the rest of the South. You must also defend eastern Tennessee. You must also protect your ports from capture and use blockade runners to ship cotton to Europe and bring back badly needed money and arms.

Thunder at the Crossroads (Gettysburg 1863 Battle Scenario): This scenario lasts mid-June to the end of September 1863 (7 turns).
Description: As Confederate General Robert E. Lee with the Army of Northern Virginia, you must invade the North and win a decisive victory to force the Union to a negotiated settlement to the War, or have the Confederacy recognized by Britain and/or France. As Union General George G. Meade with the Army Of The Potomac, you must repulse the invasion of the North and destroy Lee’s Army. The result was a three day bloody battle ending in a decisive Union victory.

1864: Bloody Roads South (2 Theater Campaign): This scenario begins April 1864 and lasts until the end of 1865.
Description: As the Union player, you have three objectives. First, in the East, you must use the Army of the Potomac and other forces to destroy the Confederate armies and capture Richmond. Second, in the West your goal is to drive through the mountains of Tennessee and Georgia to capture Atlanta, then march to the sea to cut the South in two. Third, you must continue your naval campaign against the South by capturing or blockading Southern ports. A crucial event this year is the US Presidential Election in November – if the Union does poorly, the peace party under George McClellan could win the election, thus ending the War. As the Confederate player you should defend Atlanta and Richmond at all costs, forcing the Union army to bleed to death in costly frontal assaults, which could affect the US election campaign. It's your only hope for a victory.

There were some discussion of these scenarios recently. Those who have played them had only praise for them.

A few other shorter campaigns would be interesting. Although it would be similar in concept to the Gettysburg scenario, Antietam would be interesting. Confederates operating in the North face potentially insurmountable problems, but for some reason we tend to fixate on those rare attempts they made.

Another interesting campaign would be the western theatre from early 1862 until the fall of Vicksburg in mid-1863. The Union is trying to secure the Mississippi from the Gulf coast on north. That means the seaborne invasion of Louisiana is imperative, riverine and river movement is crucial, and patience would be paramount. This was the period in which Grant was helping invent modern warfare.

While Captain Orso mentions many of the excellent scenarios, there are in addition' a few more shorter campaigns:
Seeing the Elephant - Bull Run
Bloody April - Shiloh
Make Georgia Howl - Atalanta Campaign, my personal favorite.
