Gentlemen,

I have found that the way to win as the CSA is to wait until the Yankee invader comes deep into southern territory and then to gang up on individual units, annihaliting them and building up NM.

What I can't figure out is when a unit has 'no retreats'. The orange symbol with a yellow background and two arrows, eliminating retreat possibilities and allowing me to destroy them.

When is a unit considered 'trapped'? I'd like to know this as it would allow me to speed up the inevitable Southern Victory and show the Yankees the futility of their invasion.

A unit retreats to an adjacent region if it has sufficient MC in the retreat space. If it is inside a structure or all adjacent regions have 0% MC for the unit in question, it can't retreat and is destroyed by long, vicious, bloody battle.
