What the best way to work how much you people need and to get it right ??

On the F4 screen, it tells you how many of each broad type of good (food, common goods, and luxury goods) your people want. But this is only the total, not how much of each particular good. FYI - demand is elastic up to a point, if you don't have coffee for example, your people will substitute rum if you have enough. To find it, you hover over the icon for a good on the Constructions and Various line (which is the 4th line down). This will also show how many of each specific good you are selling to your market.
