What posture should ambushing units be in?

Two choices:
1. Defensive no attack (blue) and defend (orange).
2. Attack (orange) and defend (orange).

To use #1 you are confident you opponent will cross your area in attack posture, party because you are defending in an area held by your side.
To use #2, you are prepared to attack the units which enter your area. Use this if you will be superior in numbers.

You can use the defensive posture if you use the ambush special order. If successful to the ambushing unit will attack the enemy force (even if defensive posture) with its defensive bonus and initiative bonus. Remember, though, that if you use the defensive posture and fail the ambush test, you will not attack an opponent not himself in offensive posture.

What if your ambushers are in the same space as an enemy settlement? Will you still be besieging them in ambush mode? I can picture Indians hiding in the woods around a fort, waiting to catch anyone trying to sneak in or out.

You have pictured exactly what happens. You are besieging as long as your opponent is inside the structure, you ambush stance catches your opponent if they sortie.
