So I would like to know, which cannons are the best? the rodman`s guns look very cool

, means the "poundnumber" (for example 12pounder) how strong the gun is?
And means "more pound" (example 20 pounder) the gun is better with the damage? And for what are the "Horse Artillery" is it more "light" artilley?

In general 'pound' refers to the weight of the shot, so the higher the number the heavier the shot. However, official pounder designations were not always a reliable indication of actual projectile weight.
Horse artillery refers to units where the artillerymen, loaders, etc. were mounted on their horse teams. In the regular foot batteries they mostly rode the limbers.
