How can you find out such outcomes/results? I can't find any menus in the combat results to tell me how often the guns fired.

There is a battle log that is generated each turn. It is located in the same area as the save game (if you look at your save game path, there is a folder called "logs". Inside that is the various logs that the game generates each turn). It takes a bit to figure it out, but you can see what happened, who fired, when they fired and any damage they inflicted or took.
