How the hell do I combat this?
It's almost 1864 and we're stalemated. Short of maneuvering out of position, is there any possible way to defeat a strong enemy with a lvl 7 entrenchment bonus?

There is no trick. This was trench warfare and it will last until after The War To End All Wars.
Cut his supplies; starve him out.
If you have superior numbers, you can pull off some of your forces to clear out nearby areas, because the enemy will still not have the strength to attack you either.
There are so many things you can do. Stop staring at his entrenchment.

Never attack your enemy's strength. As the Union, you can land an Army anywhere along the Confederate coast. You can also infiltrate cavalry, partisans and rangers to interdict supply lines. Enemy strong points are why God created the art of maneuver.

As others have stated, attempt to go around. However, sometimes it isn't really possible (especially given the East is so supply rich... I'm looking at you Richmond), so if you are going to attack, you need to attack with a lot. Given that the game uses power ratings when rolling for retreat, try to have a power rating at least 3 times higher that the folks you are attacking. That will often cause the defending side to retreat. Also remember that MTSG stacks do not benefit from entrenchments, so if you hit then enemy on the end of the line, you can minimize the number of enemy elements benefiting from the entrenchments. Finally, don't attack with poor leadership. Have corps commanders and a CiC with high attack ratings for the frontage bonus and firing bonus.
