how do you change a Corps or Div to a new name? Also sometimes you move a general (as the US) and end up with a stack
called 'Generals 61' which requires some rearraingements lol! thanks!

Press Alt + Left Click on the stack tab then type the new name you want to use.

Actually, you cannot change the unit's name, only the stack's name. Once the stack has been merged into another stack the stack name you modified will be lost.
