Franco-Prussian War Prussian Strategy?

I want to try the Franco-Prussian War scenario starting as the Prussians (and then, in the second or third games, playing unhappy Napoleon III). Aside from wondering if I still have to micro-manage my economy (something I'm not very good at) I'm wondering how to plan my battlefield strategy, keep my troops reinforced and supplied, and prevent the Frogs from sweeping around my flank and cutting off my forward troops. I've actually run into a turn situation in which a French army ignores my incoming attack and moves forward on my right flank to pose a threat to my rear.

It may be silly and unrealistic for the Frog to do that, but it does concern me as the Prussian.

I also wonder where the best places are to build new regiments where they can get into the fray as reinforcements.

As the French I'm wondering what options I have that will hold off the tide. Again I wonder how to mobilize and build up my army.
