In NCP the average menperhit is 100, would that be too bloody since in the mod a model represents 300 men?

depends, how many hits you have set to represent these 300 men? This data is just for flavor purpose anyway.
You can now add a new column: HorsesPerHit

20 for line infantry, 10 for skirmishers and 5 for missile and Elephants.
Should I add manually that column? it is not present in the NCP models .xls, and how does it work? I mean, cavalrymen without horses are eliminated? is it just to make cavalry more or less vulnerable?

The amount of damage a unit can suffer before being eliminated is described in "hits" (hitpoints). These hits, together with the other unit parameters model the properties of the units. A cavalry unit will have for example other parameters than infantry. The parameters MenPerHit, HorsesPerHit (and GunsPerHit) do nothing but to translate the hitpoints in an actual number of men, horses (guns) to show it to the player on the unit interface. These numbers do not influence the battle mechanic however.

20 hits for an infantry having 300 men give a 15 men per hits. As Norbert says, this is a pure cosmetic data, for display purpose and only that. People want to know they killed 285 men and 75 horses, not just for 23 hits of units.
