Is it possible to rename armies, corps, divisions,etc., and, if so, how is it done?

I fear it's currently not possible. Maybe for a patch because a thread to discuss about that was created by the beta team...

For Union, divisions have a numerical numbering.
Independant stack are named xxx's command.
And armies are named after historical army names.

Thanks for the info! I hope the ability to rename is included in the patch.
