I voted for artillery, though I could specify horse artillery in particular. I like to use at least one independent massed cavalry division in each main area of the map, when I can. Also I try to fold in sharpshooter or marines/sailors, when I can, to make them abit more effective and capitalize on their "celerity".
There are many unlisted troop types that also could be mentioned.

Actually the quote is better translated with "The artillery assigns grandeur to a profane butchery."
Friedrich der Große was king of Prussia. Maria Theresia was Emperor of Austria and thus Emperor of the Holy Roman Empire of German Nation at that time for Germany didnt exist at all before 1871 and allthough this quote is one of the most duplicated in the web since CIV 4 I was never able to verify it by a reputable source and yes I know that backseat drivers have no friends

Artillery may be the God of War, but it's the lowly grunt that has to take and hold the ground. In the end, the infantry is always at the sharp end, and wins or loses the battle.

You can't hold an objective with artillery. Infantry is the "Queen of Battle." A curious name for grunts, but then I didn't make it up.

I voted for ships, for a number of reasons. First, I love naval and maritime history, and the sea in general. Second, I have expensive tastes, and capital ships have always been by far the single most expensive item in any military arsenal throughout history. Third, I just like really big things, and in the field of military hardware, capital ships take the cake. Some folks will try to tell you less is more - poppycock, I say! MORE is more! Ramming speed!
