How to send submarines and escorts to strategic warfare?

How does Germany assign submarines to strategic warfare in the Atlantic and how do the Allies send escorts there to defend against it?

I can only answer this question from the CP point of view. There are 2 types of submarines that the CP can build. This first is found in the shipyard section with the battleships etc. Submarines built that way will be placed on the map and are used only to spring surprises on enemy fleets. They can't be used strategically.

Then there is a tab to build U-boats. Those are the subs that will be used in strategic warfare and basically are the number seen next to the ship icon at the top of the page.

This is correct. The Germans don't have to "send" submarines for strat warfare. Those are the subs that are built during the interphase (U-Boats). The submarine units on the map (they look like regular naval units) are not the same thing, and are used in normal naval combat. The German U-Boats are activated for strategic warfare by the Germans succeeding in the political event "submarine warfare".

They are Strategical Submarines, to be used for reconnaissance.

The manual section concerning Naval Warfare will be available tomorrow.

OK now I’ve figured the offensive part. How does the Entente goes about playing defense – how does one send destroyers to protect against the U boats?

Against U-Boats: (build and) deploy the most number of Escort units (DD) close to Britain.

This question was not answered and it interest me too, in my current game I dont know how to put DD and CL into escorts?

It's in the manual on page 133 under "Sinking U-Boats", where it says: "To do so DD or DE ships must be sent on patrol in a sea adjacent to Britain".

I am going to try that in my current CG and see if / how it works. Unlike in the board game, fleets do not have to return to port at the end of a turn, so you could build a little fleet of DDs and DEs and have them in a sea adjacent to England all the time. However, you would have to remember to give the DD/DE fleet a "patrol" mission the turn before the Interphase.
