Clear/Prairie/Desert/Steppes, for the ones that matter, if I read the game files right. But if you want to go overboard with frontage limits in anything other than clear terrain, you are certainly facing a most whacky war :)

My question reframed is, do the game combat tables allow for the possibility of the CSA attacking at 1-1 or less and winning? From an ingame perpective, cavalry was infamous in NCP for suffering extreme losses in battles, even after tweaks intending to lower its chance to get targetted. The way discipline tests for cavalry and infantry squares work made it detrimental to launch charges against all but the weakest infantry ...

I think the current system of committing the guards in NCP is working well - unlike the cavalry vs square mecanism. EE is the side which looks the most like what we have experienced in previous games, so your adaptation should go well. The game seems not far from mature, if my opinion on it has any value :) I wouldn't trust too much the manual though, he's misleading on some points. Digging into the forum is more...

You don't have to actually play it now, just starting a new game and send initial EE and CP turns to Jinx and me.

I'm interested to play CP, if you want to coordinate the Entente via a common AAR. No preferences regarding rules, as it would be my first TEAW Pbem, I have no clue what works best here.
